Ingredients:

- 1 ½ cups all-purpose flour

- 1 cup dehydrated banana powder

- 1 teaspoon baking powder

- ½ teaspoon baking soda

- ½ teaspoon salt

- ½ cup unsalted butter, softened

- 1 cup granulated sugar

- 2 large eggs

- 1 teaspoon vanilla extract

- 1 cup plain yogurt or buttermilk


Instructions:

1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

2. In a bowl, whisk together the flour, banana powder, baking powder, baking soda, and salt.

3. In a separate large bowl, cream together the softened butter and sugar until light and fluffy.

4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

5. Gradually add the dry ingredients to the wet ingredients, alternating with the yogurt or buttermilk. Begin and end with the dry ingredients, mixing until just combined.

6. Spoon the batter into the muffin cups, filling each about two-thirds full.

7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
