A simple recipe for homemade banana chips

Ingredients:

- 4 green (unripe) plantains, sliced into thin rounds and washed

- 2 cups coconut oil

- 3 cups water

- 1 tsp turmeric

- 1 tbsp chili powder

- Salt to taste


Instructions:

1. In a large bowl, mix the water and turmeric. Add the sliced plantains to the turmeric water and let them soak for about 10 minutes. This will help remove excess starch and prevent the chips from sticking together.

2. In a deep frying pan or pot, heat the coconut oil over medium-high heat until hot but not smoking.

3. Drain the plantain slices and pat them dry with paper towels to remove excess moisture.

4. Working in batches, carefully add the plantain slices to the hot oil, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-5 minutes per batch.

5. Use a slotted spoon to transfer the fried plantain chips to a plate lined with paper towels to drain excess oil.

6. While the chips are still hot, sprinkle them with chili powder and salt to taste.

7. Let the chips cool completely before serving.
